This March we will be flying high with the reprise of a bold event - a special Cheese & Absinthe night for one night only.
To take up this unique matching challenge, Head Cheesemonger Laura Lown will be collaborating with with Benjamin Luzz of Bar Ampere and Gin Palace, Melbourne’s own absinthe expert, as the duo present four different tastes of Absinthe alongside four artisan cheeses.
“Absinthe has delicious spicy, aniseed notes running through it, so we’re playing with matching triple cream bries for a liquorice-and-cream effect, and exploring some really punchy cheese flavours to stack up to the bold notes in each of these Absinthe varieties,” says Laura. “We’re really looking forward to introducing this flavour match to our guests.”
Ben and Laura will talk through production methods, flavour profiles and history of both the absinthe and cheese, for one night only. Not to be missed.
