Cheese & Boutique Beverage Flights

Our custom-designed flight boards offer our guests a unique cheese and boutique beverage matching experience, time after time. We pair three or four cheeses with wines, beer, cider, sake, gin and whisky and let each match sing. Our cheesemongers are on hand to talk you through the stories and taste profiles behind each pairing.

These flights are available in two sizes and change monthly. Our large cheese flight is equivalent to three full glasses of wine and the same amount of cheese you'll find on a restaurant cheeseboard.

Cheese and beer share earthy, yeasty flavours and an artisan heritage, making them naturally born to complement each other.

Hard cider and cheese are a naturally great pairing, the freshness and acidity of the cider works well with creamy, strong cheeses.

Stickies, Ports, Muscats and Topaques are matched with rich, desserty cheeses for a sweet flavour match.

Cheese and whisky both have big, audacious flavours that complement perfectly for a bold match.

The aromats and juniper in the trendiest of spirits goes particularly well with fresh, light cheeses and is a crowd favourite flight of the moment - newly added due to popular demand!

Individual fondue pots*

Gooey, delicious artisan cheese fondues served in our individual fondue pots and accompanied by crusty bread.

*Available all weekend and after 5pm weekdays.

KÄSS MIT WEIN ZU KOCHEN $22

Translation: ‘To cook cheese with wine.’ This was apparently fondue’s original name when created in Zurich in the 1600’s. Our take on the classic fondue, it features Swiss Gruyere, Appenzeller, Comte & Emmenthal.

FIGUGEGL $20

Figugegl, an abbreviation for ‘Fondue isch guet und git e guetiluune’ meaning ‘Fondue is good and creates a good mood.’ Features Herve Mons Cantal, Barbers Cheddar & Emmenthal, cooked with beer.

THE GRUNDLEGEND $35

Grundlegend is alpine slang for ‘The Ultimate'. Fitting, as this is the ultimate fondue! Il Forteto Cacio di Bosca Tartufo Stagionato, Swiss Appenzeller & Gruyere L'Etivaz are cooked with Remy Martin VSOP, Madame Coco Blanc de Blancs Brut & truffle honey. Accompanied with a ramekin of Stanton & Killeen Rutherglen topaque.

An entire wheel of Yarra Valley Yering bathed in French sparkling wine, Cognac, truffle honey, fig, pistachio, cranberry, port & orange. 

RACLETTE, OUR WAY $25

Two types of Raclette cheese, melted over seasoned new potatoes with prosciutto, cornichons & white wine. 

FLAMING SAGANAKI $15

Created by Cypriot shepherds and served as it was in the 1960s Greektown, Chicago. Pan-fried in olive oil and lemon juice, soaked in Grand Marnier Liqueur and set alight at the table upon serving. 

FRENCH ONION SOUP $12

Our classic recipe, garnished with cheese.

Each of our hand-crafted signature cocktails comes garnished with a wedge of perfectly matched cheese.
